Building trust with a dwarf hamster?

so title mostly explains it. i have a winter white, who recently escaped, but i found him at 4am today.he is back in his cage, but really spazzy. he climbs the cage, and flips out.he wants to explore more.....how do i build trust with him? i usually put a piece of food in my hand and he will crawl in my hand. any other ideas?
